This is a great EASY brunch recipe that you can change up. It's a healthier easier version of tortilla espanola, and yes, Kerry, this is what I made in college for you guys for breakfast!!
brown potatoes and onions (use the frozen bagged kind for speed!)
add to chopped deli ham or browned sausage in a casserole dish
add whisked eggs (i like to sub in more egg whites or eggbeaters for health)
mont jack or cheddar cheese
cover with tin foil bake at 400 ish until brown on top
you can add sliced tomatoes towards the end of baking
DELISH!!!!
