My go to dish when Im tired...
brown lean beef or turkey meat
add black beans
brown rice (healthier for you and you cant taste the difference when its mixed together)
small jar of salsa
whatever kind of cheese you like, i like mont jack
stuff into peppers that have been boiled for a few minutes (or in a pinch, just cut up peppers and simmer with everything else until slightly soft)
sprinkle more cheese on top and bake for about 25 minutes 375-400
also good stuffed into tomatoes or wrapped in a burrito
