I was looking for a way to use up some cottage cheese (lets face it- one little baby can't eat a whole container before the expiration date) and found this. Its super easy and yummy. I threw in some garlic and a little bit of cheddar. I haven't actually baked it yet but just the mashed taters part tastes good.
3 large Idaho potatoes
1/4 cup (1/2 stick) butter
1 cup cottage cheese
1/2 onion, diced
Salt and pepper
Paprika
Directions
Preheat the oven to 350 degrees F.
Scrub the potatoes, slice them, and put in a pot with water to cover. Boil the potatoes until tender, then drain and mash them with 2 tablespoons of the butter. Add the cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently, and then put in a greased casserole. Dot with the remaining 2 tablespoons of butter and sprinkle with paprika. Bake, uncovered, for 30 minutes.

Tortellini Caprese
I pretty much make this anytime i have to take a side dish with me to a party b/c it's so easy and so yummy. always a hit.
1 bag of any kind of tortellini (i get the big bag of barilla)
pesto (either store bought or recipe posted)
sundried tomatoes packed in olive oil
fresh mozzarella
grated parmesan cheese
olive oil
1. cook tortellini as directed on package and drain
2. finely chop about 10 sun dried tomatoes and dice up fresh mozzarella
3. poor drained pasta into bowl, sprinkle with olive oil. stir in enough pesto to cover pasta and then mix in tomatoes and mozzarella. sprinkle with parm. cheese.

Beer Biscuits
Ridiculously easy. Great alone or served with honey.
4 c Bisquick (or other biscuit mix)
1/4- 1/2 sugar (depends on how sweet you want them)
1 (12 oz) can beer2 T butter, melted
Preheat oven to 400. Butter or grease muffin tin. In a bowl, combine all ingredients and mix well. Pour batter into muffin tins. Bake 15-20 minutes or until golden.
