can of refrigerated biscuits
2 cups frozen vegetables- i like to throw in some chopped onion too
2 cups chopped cooked chicken
2 tbsp butter
1/4 c flour
2 c milk (or could substitute chicken broth)
1 tsp thyme
salt and pepper
cook vegetables and chicken in butter then add flour. cook for a minute or two to get raw flour taste out. add milk and thyme and stir until thickened. transfer to casserole dish and top with biscuits. follow whatever the instructions are for the biscuits to bake. i like that this can all be made from the freezer and pantry (i freeze leftover chicken when i bake a whole chicken and it works well). not the lighest, but so comforting :)

I do something similar except I use frozen biscuits and make my rue first and use poultry seasoning. Then I add the chicken and veggies. I totally agree. It is a quick, easy, and mostly healthy meal!
